Yes, we do make Water Kefir & it is delicious, but it's a kind of by-product for us.
A by-product that we still enjoy in between our Kombucha. And it stems from the fact, that we sell Water Kefir grains (or crystals, how some people call them) & in order to have keep those little jewels alive & healthy we have to feed them. And when we feed them, we end up with this delicious liquid.
Water Kefir is an alternative to Milk Kefir, which is great for Vegans or people who are lactose intolerant. But you should not expect it to be a one for one alternative. Quoting online article from The Home Economist (1*)
"Milk kefir, made with either dairy milk or coconut milk, far surpasses water kefir in probiotic potency. The benefits of milk based kefir exceed those of water kefir no matter if the water kefir is cultured with fruit juice, vegetable juice, coconut water, or filtered water and a whole sweetener."

" The most likely reason is that there are only 10-15 strains of good bacteria and good yeasts in water kefir made with live grains. This compares with the 30 to 50 in homemade milk kefir made with live grains."

So how we make it?
It is quite simple. A lot simpler than when you make Kombucha or Water Kefir. And the whole process is much faster. Usually 24 hours are enough!
We start with these beauties:

Organic (BIO) unrefined sugar & Organic raisins + dates & filtered + revitalized water. The reason for all Organic ingredients is simple. Dried fruits that are not Organic almost always contain sulphur as a preservative. Something that is not that good for the cultures. The sugar that we have in the house & that we use in our Kombucha is also Organic. And a good quality water is also very important. Even though we use unrefined brown sugar, the Kefir grains still need some other minerals. That's where the dried fruits come in place.
Since our water is really good, we do not even heat it up. We just add all the ingredients in.
When all things are in place then the whole thing looks like this:
After about a day small bubbles appear near the crystals. That is the sign of happy fermentation.
Then the raisins start dancing & that goes on for about 2-3 days. Also the color changes from brown to milky yellow.
When the Kefir is done, we proceed to the next step. We strain the Kefir into another container & season it. At this particular time with fresh mint (ginger is our choice for Winter months where our fresh mint is not available)
At this point we discard the raisins & dates, rinse the grains & get them ready for another batch.
We let the Water Kefir + mint sit for 24 hour to extract the flavor from mint. After that the mint is discarded & the Kefir goes into our retail bottles. In those it slowly develops the natural carbonation. When it's ready for purchase it looks like this:
