Out of all the fermented foods Milk Kefir stands up well above the crowd. And the reason for that is simple - it is very healthy.
But not the commercial one, though. That one has been modified so it can sit on a shelf for a while. Here we are talking about the home made one - and this is exactly the one we make, we drink & we sell.
And we sell the Milk Kefir grains, too.
So what is Milk Kefir? Kefir is "is a fermented milk drink that originated in the Caucasus Mountains made with kefir "grains", a yeast/bacterial fermentation starter." (1*)
So now that we have a definition, lets go to some of the benefits.

Milk Kefir is not only healthy but also delicious. The fermentation process practically eliminates milk's lactose & it makes it more digestible for people, even for those who have problems dealing with this "milk's sugar".
And on a personal note. Since I started drinking Milk Kefir regularly, my Spring allergies disappeared last year. And I had to deal with them every single year since 1995. Now that is something, especially that I have been drinking Kombucha & eating other fermented foods for years, and that made no difference.
To make it is very easy. All you need is milk, the best quality you can find, raw milk is optimal if you can find it, and the Kefir grains. We use local BIO (Organic) milk that has not been homogenized.
It comes from pasture raised cows & it makes great Kefir.
The process only takes about 24 hrs & when it's done it looks like this:

We make our Milk Kefir fresh daily & because of that we usually end up with more than we need. But that causes no worry for us. We actually absolutely love when we have too much Milk Kefir.
Because when we do, we make this:
A probiotic & delicious fresh cheese! And when the cheese is ready, we mix it with radishes & fresh chives:
After we season it with salt & pepper, we have a breakfast feast:
When we put it all together with a sourdough bread, French raw milk butter, avocado, tomato, arugula & sprouts, it looks like this:
